Paneer at restaurants — do you ask if it's fresh/homemade?

Indian restaurants near me make paneer in-house sometimes. BumpBites says paneer is usually fine if handled well, but I'm unsure about fresh batches sitting out.

What do you ask when you order?

I ask if it's refrigerated and cooked through in the curry. Homemade soft cheese anxiety is real even when the answer is probably fine.
